Roasted Zucchini Fries


I used a beautiful tray of Baby Zucchini from Melissa's Produce to make homemade Zucchini fries.  They were creamy, crispy, and full of flavor!  

Minimal prep led to a great dish.  I simply cut the bottom and top off the small zucchini, and quartered them lengthwise. The second step was to toss in a bit of olive oil, and lay them out on a baking pan.  I used my glass 8x10 Pyrex pan.  I sprinkled them with garlic salt, smoked paprika, and a bit of Trader Joe's everything bagel seasoning.  

Roasted at 400 degrees in a toaster oven for 25 minutes, the fries were a huge treat!  I served them alongside a smoked paprika aoli.  Have you made homemade fries from any vegetable?  What's your favorite, and what are your tips for preparation?
