My friend sent me a recipe that looks so great I thought I'd share it. It's from a friend of her's mother-in-law.
Squash Casserole
3 or 4 cups of cooked yellow squash
1 med. onion, sliced
2 c. grated cheddar cheese
1 can cream of mushroom soup
3/4 stick of butter
2 cups crushed Ritz cracker crumbs
1 t salt
1/2 t pepper
Wash, slice, and cook squash in water until tender (approx. 15 to 20 min.). Drain water and mash in collander. Add salt and pepper. In casserole dish, put one layer of mashed squash, layer of sliced onion, layer of mushroom soup, and layer of grated cheese. Repeat process and do second layer the same. Melt the butter in a sauce pan, then add cracker crumbs and mix. Cover casserole with buttered crumbs and bake at 350 for 30 minutes or until hot and bubbly.
