I'm visiting my friend Cathy's family in Houston. Her three children have all had food allergies which have necessitated food-restrictive diets when they were small and nursing. She's come across this recipe for Vegan Chocolate Chip Scones, and we had them for breakfast. They're a delicious treat! As a finishing touch before baking Cathy & Brian dust them with sugar crystals. That addition makes them crispy on the outside and extra sweet and creamy within. Here's the recipe:
Vegan Chocolate Chip Scones
1 3/4 Cup Flour
1/3 Cup Sugar
2 tsp Baking Powder
1/2 tsp Salt
5 Tbsp Cold Unsalted Butter, cut into bits
1/2 Cup Mini Chocolate Chips
3 Tbsp, or more, Orange Juice--enough to make dough bind together, add by tablespoon till good
Bake at 400º until golden, about 12 minutes.
